Environment: The federation is dedicated to supporting farmers in exploring new markets and securing better prices for their beloved coffee. These farmers tend to small farms averaging about 2.5 hectares, nestled between 1,200 to 1,700 meters above sea level. Within FEDESI, members receive guidance and training in Good Agricultural Practices, empowering them to boost productivity and craft exceptional coffee. Furthermore, farmers are offered the chance to access upfront financing for their coffee crops, fostering growth and success in their cherished trade.

About Harvest & treatment of coffee beans: New Harvest!

Given the modest size of the farms, the majority of the farm labor is undertaken by the dedicated families themselves. These passionate farmers meticulously handpick the ripe, red cherries and process them right on their farms. The cherries are delicately floated to remove any underripe ones before being pulped and undergoing fermentation, typically in cement tanks for a duration of 10 to 16 hours. Some producers employ plastic vats for this process as well.

Post-fermentation, the parchment is washed thoroughly in pristine water and carefully laid out on cement patios for drying. To ensure an even drying process, the parchment is diligently raked at regular intervals. This meticulous care and attention take approximately 5 to 10 days for the parchment to achieve the perfect dryness.
